About Vosges Haut-Chocolate

  • Starting as an apprentice in Spain under the guidance of Ferran and Albert Adria of the renowned El Bulli, I began to understand that food is a medium for a transformative, visceral experience. A perfect bite in an unexpected form can spark curiosity and open someone's heart. It can create balance.
  • With Ferran's encouragement, I began a quest guided by "signs" to determine my path and why into the world of delicious, meaningful food. I began a journey around the world. In my travels, I began to see my destiny as an alchemist, sharing the long tradition of those who believe that creation is a great work, and that when ingredients are combined in the right way, they become greater than the sum of their parts.
  • When I returned to the U.S., I knew that the restaurant kitchen was not for me, and that my travels had freed me to tell and re-tell stories that would have the impact of opening minds, balancing body, mind, and spirit, and creating an appreciation for the world's diverse cultures.
