About Vosges Haut-Chocolate

  • Starting as an apprentice in Spain under the guidance of Ferran and Albert Adria of the renowned El Bulli, I began to understand that food is a medium for a transformative, visceral experience. A perfect bite in an unexpected form can spark curiosity and open someone's heart. It can create balance.
  • With Ferran's encouragement, I began a quest guided by "signs" to determine my path and why into the world of delicious, meaningful food. I began a journey around the world. In my travels, I began to see my destiny as an alchemist, sharing the long tradition of those who believe that creation is a great work, and that when ingredients are combined in the right way, they become greater than the sum of their parts.
  • When I returned to the U.S., I knew that the restaurant kitchen was not for me, and that my travels had freed me to tell and re-tell stories that would have the impact of opening minds, balancing body, mind, and spirit, and creating an appreciation for the world's diverse cultures.

Vosges Haut - Chocolate FAQ

Q: What is cocoa?

A: In Aztec culture, raw cacao was often referred to as the "food of the gods," an ancient superfood once reserved for the royal elite. In the ancient world, cacao was a form of currency, and the mystique of this plant has been well documented since the beginning of writing.

For most of its historical life, cocoa has been consumed in beverage form. When taken this way, these drinks are rich in theobromine, a mellower, longer-lasting stimulant than caffeine, but without the "caffeine crash" effect.

Q: What is the difference between cocoa and cacao?

A: So, what is cocoa, and how does it differ from cacao? While the cocoa vs. cocoa debate can be confusing, they are indeed very similar. Most people are more familiar with cocoa powder, as it is the main ingredient in many cakes, pastries, and baked goods.

While both products come from the beans of the cocoa plant, the difference between the two lies in the way they are processed.

Q: What is a cacao ceremony?

A: Cacao ceremonies have been performed for over 4,000 years. The ancient world was acutely aware of the power of cacao. While we have some written records of these ceremonies, we must rely on history and stories passed down from generation to generation to create our own.
